Slow Baked Sautéed Spinach, Bacon & Feta Frittata

Ingredients

  • 1 Tbsp. olive oil
  • 2 handfuls (or more) baby spinach
  • 4 strips cooked, crumbled bacon
  • 6 eggs
  • 1/4 cup milk
  • 1/4 tsp. salt
  • 1/2 cup crumbled feta

Instructions

  1. Preheat oven to 300 degrees.
  2. In an ovenproof pan add olive oil.
  3. Over medium heat, sauté the spinach until just wilted.
  4. Add the bacon and sauté for a few more minutes until heated through.
  5. In the meantime, whisk eggs, milk and salt and stir into the spinach mixture.
  6. Keep on burner until the egg is just set.
  7. Transfer pan to the oven.
  8. Bake for about 20 minutes, until the egg is just set in the middle.
  9. Remove from oven and cool slightly.
  10. Cut into 6 slices and sprinkle with crumbled feta.
  11. Serve.
