Simple Sausage Lasagna

Ingredients

  • 1 lb. bulk sweet pork sausage
  • 3 heaping cups homemade tomato sauce (or 26 oz. jarred spaghetti sauce)
  • 1/2 cup water
  • 3 cups Ricotta cheese (32 oz.)
  • 1 cup grated Parmesan cheese
  • 2 Tbsp. dried parsley flakes
  • 2 eggs, lightly beaten
  • 9 uncooked lasagna noodles
  • 3 cups shredded part-skim Mozzarella cheese

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, cook sausage over medium heat until no longer pink; drain.
  3. Stir in tomato sauce and water.
  4. Simmer, uncovered, 10 minutes.
  5. Meanwhile, in a large bowl, combine Ricotta cheese, Parmesan cheese, parsley and eggs.
  6. Spread 1/2 cup meat sauce into a greased 13 x 9 baking dish.
  7. Layer with three noodles and one-third of the Ricotta cheese mixture, meat sauce and Mozzarella cheese.
  8. Repeat layers two more times.
  9. Cover and bake 45 minutes.
  10. Uncover; bake 10 minutes or until a browned and bubbly.
  11. Let stand 15 minutes before cutting.
