The Meal: Shepherd’s Pie

Is there anything cuter than that first crush? Is there anything we wouldn’t do to get the attention of our first crush…even if it means bobby pinning towels to our head? I do believe that I, along with thousands of other 40-somethings, still secretly have a crush on the gorgeous lead singer of the Partridge Family…that burgundy velvet suit, that frilly tuxedo shirt, that feathered hair…Man…

I still have to crank the car stereo when his music comes on! I am 6 again…preparing to go on tour in that color-blocked bus with my favorite TV family…the Partridges. Of course if we allow ourselves to reallly dream big, we’re picking up the Brady kids, sharing hair-care secrets with Marcia, gainin’ some swag from Johnny Bravo, and jamming in the back to a mash-up of Come on Get Happy and It’s a Sunshine Day…

This is great fun but it’s also hard work…I imagine a long day on tour would warrant a big bowl of hearty shepherd’s pie upon our return…

The shepherd’s pie we ate growing up, and still eat today, is probably as rustic, simple and comforting as it comes! Just three components: mashed potatoes, corn and hamburger…and, as you can plainly see, salt, pepper and butter, for the ultimate enhancement!

Shepherd’s Pie

Ingredients

Scale
  • 2 1/2 pounds Yukon Gold potatoes
  • 1/2 cup of milk
  • 4 Tbsp. of butter
  • Salt and pepper
  • 2 lbs. ground sirloin
  • 2 cans of corn, drained

Instructions

  1. Boil your peeled and quartered potatoes until fork tender. Drain.
  2. Place potatoes in mixing bowl with milk, butter, salt and pepper.
  3. Beat on high speed until smooth and creamy. Set aside.
  4. In a non-stick skillet, cook the ground sirloin until it is fully done (no pink left).
  5. Open the corn.
  6. Layer ingredients in a 13 x 9 pan beginning with the beef.
  7. Top the beef with corn.
  8. Top the corn with mashed potatoes.
  9. Place in a 350 degree oven and heat through for 35 – 40 minutes.
  10. Top the potatoes with butter, salt and pepper.
