Ingredients

- 4 lbs. Carrots
- 3 – 4 Tbsp. Olive Oil
- 1 tsp. kosher salt
- 1/2 tsp. cracked black pepper
Instructions
- Preheat oven to 450 degrees.
- Clean and peel carrots.
- Place them in a 13×9 cookie sheet.
- Add olive oil, salt, and pepper. Mix.
- Roast for about 45 minutes, until carrots are browned and tender.
