Ingredients

Scale
  • 1 pound seedless black grapes, rinsed
  • 45 Tbsp. olive oil (divided)
  • Salt and cracked black pepper to taste
  • 34 sprigs fresh thyme
  • 1 small dense loaf of Italian bread
  • 1/2 cup fresh ricotta
  • 1/2 cup mascarpone
  • 4 tsp. (or more) minced fresh thyme

Instructions

  1. Preheat oven to 400 F.
  2. Place grapes on baking sheet.
  3. Toss with 3 Tbsp. olive oil, salt, pepper and fresh thyme sprigs.
  4. Roast for 15 – 20 minutes until grapes are fragrant and softened. Remove from oven.
  5. When grapes are slightly cooled, remove from stems and set aside.
  6. Meanwhile, slice the bread into 1/2-inch thick slices.
  7. Place on a baking sheet and drizzle both sides with remaining olive oil.
  8. Bake bread for 5 – 7 minutes in the 400 degree oven until golden and crispy.
  9. In a medium bowl, combine the ricotta with mascarpone and stir until smooth and creamy.
  10. To assemble crostini, slather the bread with cheese, top with roasted grapes and season with salt, pepper and minced fresh thyme.
