After last Sunday’s playoff games, our attention immediately turned to the Super Bowl. Texts were sent to the kids asking who they’ll be rooting for, 1 out of the 5 of us will be cheering on the LA Rams, then, in common fashion, my mind turned to food.

I was inspired to come up with a tasty dish for the big game. Chicken tenders – always a hit, cheese platters – never a disappointment, and who doesn’t love a good bacon wrapped tater tot? But Roasted Eggplant, Tomato and Basil Pizza?

Touchdown!!

With Dom’s (and my 😉 ) love for pizza, we are never at a loss for a tasty meal. And although cheese pizza always hits the mark, when we dress it up, all the better!

Roasting veggies for pizza is not only simple to do, it makes for a delectable addition! And don’t even get me started on roasted eggplant rounds – I could eat them like chips!

How To Roast Vegetables:

  • Pre-heat oven to 400 F.
  • Slice the eggplant into 1/8-inch rounds, keeping the skin on.
  • Deliver eggplant, tomatoes, and any other veg you want to top your pizza with, to a large sheet pan.
  • Drizzle with olive oil.
  • Sprinkle plenty of kosher salt and cracked black pepper.
  • Roast for about 25 – 30 minutes, until veggies are soft and caramelized.

Can we talk for a minute about what happens to a tomato when high heat, olive oil and spices get involved?

Even in the dead of winter, when roasting tomatoes, they become sweet, juicy and fragrant.

COOK’S NOTES FOR ROASTED EGGPLANT, TOMATO AND BASIL PIZZA:

  • You can use homemade or store-bought pizza dough.
  • You can use homemade or store-bought pizza sauce.
  • Feel free to change up the veggies to suit your taste.
  • If you like the aroma of authentic Italian pizzerias, this pizza delivers big-time in the olfactory department! (So much so, I was having flashbacks to my teenage days working in the deli, hairnet and all!)
  • 1/2 lb. of dough will make two 10 to 12-inch pizzas.
  • Remove stems from the tomatoes before eating, they’re for illustration purposes only.

Description

This mouth-watering Roasted Eggplant, Tomato and Basil Pizza will turn your kitchen into an Italian pizzeria!


Ingredients

Scale

1 medium eggplant, sliced thin, skin on

12 oz. Roma tomatoes on the vine

2 – 3 Tbs. olive oil, for drizzling

Kosher salt and cracked black pepper, to taste

1 cup pizza sauce

10 oz. sliced mozzarella

2 – 3 Tbsp. fresh basil leaves

1 – 2 tsp. balsamic vinegar

1/2 lb. pizza dough, makes 2 (10 to12-inch) pizzas


Instructions

Pre-heat oven to 400 F.

Slice the eggplant into 1/8-inch rounds, keeping the skin on.

Deliver eggplant, tomatoes, and any other veg you want to top your pizza with, to a large sheet pan.

Drizzle with olive oil.

Sprinkle plenty of kosher salt and cracked black pepper.

Roast for about 25 – 30 minutes, until veggies are soft and caramelized. Remove from oven. Set aside.

Heat oven to 475 F.

Prep two oven or pizza trays, place in oven.

Divide the dough in half; roll each dough on a floured surface into a 10 to 12-inch round. Place on trays.

Spread pizzas with sauce.

Top with mozzarella, eggplant and tomatoes. Season with salt and pepper.

Bake pizzas about 15 minutes or until bases are browned and crisp.

Serve sprinkled with fresh basil and a drizzle of balsamic vinegar.

    This is going directly to my Best Eggplant recipes board. I love eggplant probably as much as your man does pizza:) And Movable Feast is such a favorite. Definitely need to make this, sit down with a Hemingway short story and a beer and enjoy.

    We have a serious addiction to pizza in our house, and it will definitely be on the menu for Super Bowl Sunday. My hubby usually goes for a meat pizza, but I’m all about the veggies, so this one is calling my name. And I’m sure I won’t have any trouble polishing it all off! Pinned!
