Description

Pork Pot Roast with Pears will have you wishing for autumn all year through.


Ingredients

Scale
  • 3 Tbsp. olive oil
  • 3 lbs. boneless pork roast
  • 1 tsp. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1/3 cup chopped shallots
  • 4 large pears, cored and sliced
  • 2 bay leaves
  • 3/4 cup apple cider
  • 1/2 cup red apple balsamic vinegar
  • 4 Tbsp. maple syrup

Instructions

  1. Preheat oven to 400 degrees.
  2. Using the dutch oven heat the oil.
  3. Salt and pepper the pork and brown all sides in the dutch oven.
  4. Add shallots and cook for 3 minutes.
  5. Add pears, bay leaves, cider, red apple balsamic and maple syrup to the pot.
  6. Roast for about one hour. (Internal temp. should be 145 F.)
  7. Remove from oven.
  8. Let rest for 5 – 10 minutes.
  9. Remove bay leaves. Salt and pepper to taste.
  10. Serve.
