I hope your holidays were joyful!
Our girls were home for two weeks, and with Nick living in town, the five of us were gifted with plenty of quality time…time to let conversations slowly unfold, time to stay up late, and sleep in longer…time to drink all the coffee and eat all the carbs. It was a good one!
Part of our holiday included a long weekend in Lake Placid, NY; and although the original plan included skiing at Whiteface Mtn. (not I), as it turned out – ‘Iceface Mtn.’ had a different plan for us. So with the icy terrain making it dangerous to ski, we spent more time enjoying the village that we have long adored with its fresh pine-y air, quaint shops and welcoming restaurants.
Friday night, we dressed up and went out for a late dinner at the The Interlaken Inn, one of our favorite places in town. It’s here that I was first introduced to Sweet Potato Fritters with Sriracha Mayo. <——A CCB favorite!
With a menu that never disappoints, coupled with a mood tempted by adventure, I was keen on something out of the ordinary. I tend to be a meat and potatoes kinda girl – but this night, it was all about the seafood.
Hence today’s recipe.
I came home inspired to recreate (to a degree) the salmon dish that I enjoyed.
Tender and crispy salmon set atop creamy grainy mustard mashed potatoes showered with crispy leek rings (literally a mouthful) is a meal worth making!
Have you ever tried mustard in your mashed potatoes? Upon Dom’s first bite – he had an immediate food memory. It took him right to his favorite NYC potato knish with a hefty dollop of grainy mustard. (Mmmmm.)
Oh my – ’tis a mash-up worth executing.
I could eat just the potatoes with a warm swirl of melted butter, but to add crispy seared salmon and crunchy baby oniony rings…whoa, we are talking good stuff!!
INGREDIENTS:
Russet potatoes
Butter
Whole milk (or half & half)
Whole grain mustard
Salt & Pepper
Salmon fillet
Leek (white and green parts only)
All-purpose flour
Cayenne papper (optional)
Olive oil

Pan Seared Salmon with Grainy Mustard Mashed Potatoes & Crispy Fried Leeks
Description
Easy and delicious, Pan Seared Salmon with Grainy Mustard Mashed Potatoes & Crispy Fried Leeks is an impressive meal that comes together quickly and without a ton of fuss!
Ingredients
2 1/2 pounds russet potatoes, peeled and quartered
1 leek (white and green parts only) cut into 1/4-inch rings, rinsed well
2 Tbsp. flour
1/8 tsp. cayenne
olive oil
10 Tbsp. of butter, divided
3/4 cup whole milk (or half & half)
4 Tbsp. whole grain mustard
Salt & Pepper, to taste
12 oz. salmon fillet cut into 4 pieces
Instructions
In a large pot of salted boiling water, cook the potatoes until tender. About 20 minutes.
In the meantime, while the potatoes are boiling, combine flour and cayenne in a medium bowl. Add leeks and toss to coat.
In a medium saucepan over medium heat, heat 2-inches of oil until a thermometer registers 350 F.
Working in batches, add leek rings and cook, turning until crisp and light golden around edges, about 1 minute.
With a slotted spoon, transfer leeks to paper towels to drain.
Season with salt. Set aside.
Once potatoes are tender, drain well and return to the pot that they cooked in.
Add 1/2 cup butter, milk, salt and pepper. Using a hand mixer, mix until smooth.
Add mustard and fold in with a spoon until combined. Keep warm.
Next, in a nonstick skillet over medium-high heat, melt 2 Tbsp. butter.
Salt and pepper the salmon and place in the pan skin side up.
Cook, without turning, for 5 – 6 minutes, until the flesh turns deep brown.
Flip and cook for another 2 – 3 minutes.
When salmon is ready, plate the potatoes and top with the salmon.
Sprinkle fried leeks over the salmon and potatoes and serve.
