Description

Old-Fashioned Potato Salad for the win! For the wins! So many wins!


Ingredients

Scale
  • 3 lbs. russet potatoes, skins on, cut into quarters
  • 6 eggs, hard-boiled
  • 1 1/2 cups good mayonnaise
  • 2 tsp salt
  • 1 tsp. black pepper
  • 23 celery stalks, chopped
  • 1 medium red onion, chopped,
  • 1 tsp. paprika

Instructions

  1. Boil potatoes in salted water until fork tender.
  2. Drain potatoes and place in a large bowl.
  3. With a potato masher, mash until broken down, keeping some texture.
  4. Add boiled eggs, mayonnaise, salt, pepper, celery, onion and half the paprika.
  5. Mix until combined.
  6. Top with remaining paprika.
  7. Cover and place in refrigerator for up to two hours.
  8. Enjoy.
