Mom’s Old-Fashioned Meatloaf

Description

I am all about comfort foods these days, and Mom’s Old-Fashioned Meatloaf fits the bill!


Ingredients

Scale

2 lbs. ground beef

2 eggs

1 cup seasoned bread crumbs

1 cup ketchup, plus more for drizzling

2 medium onions (1 diced and the other sliced)

salt & black pepper, to taste


Instructions

Heat the oven to 350 F.

Grease a baking pan. Set aside.

In a large mixing bowl, combine the ground beef with the eggs, bread crumbs, 1 cup of ketchup, diced onion, salt and pepper.

Place the meat mixture in a baking pan and shape it into a loaf.

Drizzle the top with ketchup and salt and pepper.

Place the sliced onion around the perimeter of the meatloaf.

Bake for 1 hour.

Drizzle more ketchup on the top, and bake for another 10 – 15 minutes or until a thermometer registers 160 F.

Serve warm.

Notes

Meatloaf makes for great leftovers. Slice it up and serve in sandwiches.
