Made with the tastiest marinade ever, these Mediterranean Chicken Kebabs with Lemon Aioli will be the hit of your summertime barbecues!
One of my all-time favorite meals for entertaining, these Mediterranean Chicken Kebabs are marinated in a sunny mix of bright and lemony flavors that make my mouth sing.
If you’re planning a barbecue for Memorial Day, these kebabs, alongside a good old-fashioned mac salad or potato salad, and a good baked bean, are the start to an unforgettable picnic.
Although chicken breast is a pretty popular choice for kebabs, especially if you prefer white meat, we’re going with boneless chicken thighs today. I find the dark meat to be more flavorful and tender. Super tender!!
Such a simple meal. And if you have the time, I recommend you let the chicken marinate over night.
Once you’re ready to get grilling, it’s just a matter of threading your skewers (metal is best) alternating the chicken with the veg.
As a rule, I like to add red onion and red or yellow bell peppers.
KEBAB INGREDIENTS:
- olive oil
- lemons
- garlic cloves
- yellow onion
- dried oregano
- dried rosemary
- salt & black pepper
- fresh parsley
- boneless chicken thighs
- red bell peppers
- red onions
- zucchini
AIOLI INGREDIENTS:
- good mayonnaise
- lemon juice
- lemon zest
- garlic
- black pepper
To finish off our kebabs – a quick and easy creamy aioli, with its punch of lemon and garlic is the perfect complement to the Mediterranean flavors of our chicken.

Ingredients
Chicken Kebabs
1/2 cup olive oil
Juice of 2 lemons
3 plump garlic cloves, minced
1 yellow onion, sliced
1 tsp. dried oregano
1/4 tsp. dried rosemary
salt & black pepper, to taste
handful of chopped fresh parsley
2 lbs. boneless chicken thighs cut into 1-inch pieces
2 red bell peppers, cut into chunks
1 red onions, cut into chunks
Lemon Aioli
1/2 cup good mayonnaise
2 Tbsp. fresh lemon juice
Zest from half a lemon
1 garlic clove, minced
A good grind of black pepper
Instructions
To prepare the marinade, in a medium mixing bowl, combine olive oil, lemon juice, minced garlic, sliced yellow onion, oregano, rosemary, salt, pepper, and fresh parsley.
Pour marinade in a gallon-size ziplock. Add the chicken.
Allow chicken to marinate in the refrigerator for at least 4 hours or overnight.
In the meantime, prepare the aioli.
In a small mixing bowl whisk mayonnaise, lemon juice, lemon zest, minced garlic and black pepper. Place in refrigerator until ready to use.
When ready, preheat grill to medium-high.
Loosely thread the marinated chicken along with bell pepper and red onion on metal skewers.
Place skewers on the grill, turning often so each side browns nicely and has grill marks.
Grill until chicken is cooked through (about 15 – 20 minutes) or until juices run clear and veggies have softened.
Serve skewers with lemon aioli, lemon wedges, and fresh parsley.
