I’m kicking myself for not calling this post “Homemade Cream of Mushroom Soup for a Crowd”!


Ingredients

Scale
  • 3 cloves garlic, minced
  • 1 cup butter, divided
  • 1 large yellow onion, diced
  • 3 ribs of celery, diced
  • 1 large green pepper, diced
  • 3 lbs. fresh mushrooms, sliced
  • 6 cup chicken broth
  • 1 cup all-purpose flour
  • 9 cups whole milk
  • 1 Tbsp. kosher salt
  • 1 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. nutmeg

Instructions

  1. In a large heavy bottom pot, sauté garlic in 2 tablespoons butter.
  2. Add onion, celery and green pepper; sauté until tender.
  3. Add mushrooms; sauté for 5 minutes.
  4. Stir in chicken broth and simmer for 20 minutes.
  5. In a saucepan, melt remaining butter; stir in flour until smooth.
  6. Gradually stir in milk.
  7. Cook and stir over low heat until mixture comes to a boil; boil for 2 minutes while continuing to stir.
  8. Add to mushroom mixture.
  9. Stir in salt, pepper and nutmeg.
  10. Serve and season each bowl, to taste.
