Grilled Cheese Italiano

Ingredients

  • 12 tsp. minced garlic
  • 12 tsp. red pepper flakes
  • 12 tsp. dried oregano
  • 12 tsp. grated Parmesan
  • 1 Tbsp. soft butter, divided
  • 1 Tbsp. D’Artagnan duck fat, divided
  • 2 slices crusty Italian bread
  • 1/3 cup shredded mozzarella
  • 1/3 cup shredded fontina

Instructions

  1. Set broiler to High.
  2. Combine minced garlic, red pepper flakes, oregano and Parmesan in a small bowl. Set aside.
  3. Place cast iron or heavy bottomed skillet on stove top over medium high heat.
  4. Butter one side of each slice of bread with 1/2 Tbsp. butter and 1/2 Tbsp. duck fat.
  5. Place buttered side down in the pan and let cook for about 3 minutes until bread gets golden and crunchy.
  6. Remove from heat and top one slice with the mozzarella, the other slice with fontina then sprinkle the herb mixture over top.
  7. Place under broiler for about 1 minute until cheese melts.
  8. Remove from the oven.
  9. Close to make a sandwich.
  10. Serve immediately.
