A gorgeous layering of flavors and textures in this Creamy Mascarpone Polenta with Crispy Fried Eggs feels like home on a plate.


Ingredients

Scale
  • 1 box DeLallo Instant Polenta
  • 4 1/2 cups water
  • 1/31/2 cup mascarpone
  • 1/31/2 cup shredded Asiago Cheese
  • Butter, divided
  • 2 eggs
  • Kosher salt and black pepper, to taste
  • Pinch of red pepper flakes
  • Chives, chopped, to taste

Instructions

  1. Cook polenta according to package directions.
  2. When it’s done, about one minute, remove from heat and add the mascarpone, Asiago and salt and pepper. Stir until fully combined. Set aside.
  3. In a skillet over medium-high heat, melt 2 Tbsp. butter.
  4. Crack eggs into skillet and season with salt, pepper and red pepper flakes.
  5. Cover pan and cook until eggs are crispy and yolk is still soft.
  6. Spoon polenta onto a plate or into a serving bowl.
  7. Top with the crispy fried eggs, shredded Asiago and chives.
