- 1 box DeLallo Instant Polenta
- 4 1/2 cups water
- 1/3 – 1/2 cup mascarpone
- 1/3 – 1/2 cup shredded Asiago Cheese
- Butter, divided
- 2 eggs
- Kosher salt and black pepper, to taste
- Pinch of red pepper flakes
- Chives, chopped, to taste
Instructions
- Cook polenta according to package directions.
- When it’s done, about one minute, remove from heat and add the mascarpone, Asiago and salt and pepper. Stir until fully combined. Set aside.
- In a skillet over medium-high heat, melt 2 Tbsp. butter.
- Crack eggs into skillet and season with salt, pepper and red pepper flakes.
- Cover pan and cook until eggs are crispy and yolk is still soft.
- Spoon polenta onto a plate or into a serving bowl.
- Top with the crispy fried eggs, shredded Asiago and chives.
