You’ll wish every day was St. Patrick’s Day after trying this completely sublime panini with its tender and subtly spiced corned beef, creamy slaw and slightly sharp but still sweet Dubliner cheese.
While sitting in a theater recently waiting for Still Alice to begin, I asked Dom to put on his thinking cap.
With St. Patrick’s Day barreling down I was itching to brainstorm ideas for an Irish dish…this all by itself makes for great conversation…but then I threw him a curve ball – the recipe needed to have an Italian twist. Mm-hmm. And since we arrived to the theater almost an hour early, we had plenty of time to deliberate. Are you wondering why we arrived at 6:30 for a 7:30 movie? That’s just how we roll, people. Yep, this empty nest has us doing some crazy things. We drove from the west side to the east side of town to sit in seats that have long lost their charm, however, they still managed to make our trek worth it as we were able to enjoy the cozy atmosphere of this very cultured (fancy way for saying aged) diminutive indie cinema, where we munched popcorn, discussed recipes, and enjoyed Julianne Moore’s Oscar winning performance. A perfect date in my book.
So without the pressure of time, our imaginations were able to run free and this mighty Corned Beef & Horseradish Cabbage Slaw with Dubliner Cheese Panini took form. Hence, Irish and Italian. We’re taking traditional Irish flavors and layering them between two pieces of crispy buttery bread to form an Italian-named sandwich.
You’ll never guess where we got our ingredients for this bomb of a sandwich. (Do people even say that anymore? The bomb?) You’d be right if you guessed Trader Joe’s. Yep, the fixings for a sandwich that just might have our boy, Nick, searching for excuses to break away from campus for a quick visit home on a daily, I mean, semi-regular basis.
This is an awesome slaw. Nothing fancy but really yummy…shredded cabbage, mayo, a little apple cider vinegar, a pinch of sugar, salt and pepper. It’s the recipe I grew up eating. My mom typically made it when Sloppy Joe’s were on the menu; however, today we’re introducing a new element to our family recipe.
Horseradish.
The horseradish-y kick tempered by the little bit of sweetness included in our original mayo-based recipe is a perfect topping for Trader Joe’s Pocino Uncured Corned Beef and Kerrygold Dubliner Cheese.
I knew from the moment I saw the name Kerrygold I would love it. I love their butter so the thought of a Kerrygold cheese made my knees go weak. It’s a good thing I’m sitting as I write this.
The moment we wriggled the sun colored block out of its airtight packaging and tasted a sliver I realized this cheese was exactly what I was going for. A kind of Irish cheddar with a real Parmigiano quality. Slightly sharp slightly sweet with the faintest whisper of a crunch. Kerrygold Dubliners is the ideal cheese for this panini as it is great for snacking and perfect for sandwiches.
And lastly…the crunch you can get on Trader Joe’s Canadian White makes it a perfect home for our savory ingredients…and don’t forget the Kerrygold butter for spreading. (I promise you – this is not a sponsored post for Trader Joe’s or Kerrygold, I just love them!)
I imagine a crisp white would pair beautifully with this scrumptious panini but it is St. Patty’s Day after all…so if you can get your hands on some green beer – go for it! Any beer, really…root or otherwise… will work perfectly to wash down our Irish-Italian creation!

Corned Beef & Horseradish Cabbage Slaw with Dubliner Cheese Panini
- Yield: 4 sandwiches 1x
Ingredients
- 1.5 lbs. Pocino Uncured Corned Beef
- 8 slices Canadian White Bread
- 3 cups shredded cabbage
- 3/4 cup mayonnaise
- 3 tsp. sugar
- 3 Tbsp. apple cider vinegar
- 3 tsp. prepared horseradish
- Thinly sliced Kerrygold Dubliner Cheese
- butter, softened
Instructions
- Preheat oven to 400 degrees.
- Place corned beef in an oven safe dish and cover with 1 cup of water.
- Cover with foil and cook for 25 – 35 minutes, until heated through.
- Remove from oven. Set aside.
- In the meantime, prepare slaw.
- Shred cabbage and place in a large bowl. Add mayonnaise, sugar, vinegar and horseradish.
- Stir until fully combined.
- If using a panini press, first preheat the press.
- Butter one side of a slice of bread and carefully rest it on the press (buttered side down).
- Proceed to layer shredded corned beef, a half cup of slaw, a few slices of cheese and the top piece of buttered bread. (Butter facing up.)
- Press for 3 – 4 minutes until golden.
- If making the panini on the stove, follow the same instructions for making the sandwich but use a skillet on a burner instead. Create pressure by using a heavy pan to weigh it down.
- Cook for 3 – 4 minutes on each side.
- Serve hot.

Oh I wish I had a TJs near by. I haven’t been in years. The closest one is 1.5 hours away plus a ferry ride! I so wish we had one that was closer. I made this tonight with mushroom loaf deli slices and it was delicious! I’d never tried the cheese in your recipe and we loved it! One of the best parts was the cabbage that fell out of the sandwich and on to the grill pan… it developed crunchy little edges that were just fabulous! Loved the dressing for the slaw.. it had just enough kick! We had some left over so we ate the rest of it up on it’s own. Thank you for this quick and delicious dinner, Annie!
