This recipe comes to you by way of a mash-up.

I was poking around CCB’s early-early-early days and came upon two of my favorite recipes: Cheesy Chicken Divan and Shepherd’s Pie. My stomach growled, my mouth watered, and I’m sure you know what came next….

I got up and poured myself a cup of coffee. (Gotcha! 😉 )

And then – lightning struck!

Why has it taken me this long to make a love connection between these two comfort food power houses?!

Shepherd’s Pie in all of its corny mashed potato glory… Chicken Divan in all of its chicken with cheddar and buttery bread crumb splendor….

This makes so much sense!

INGREDIENTS FOR CHEESY SHEPHERD’S PIE:

  • Yukon Gold potatoes
  • Milk
  • Butter
  • Salt and pepper
  • Ground sirloin
  • Corn
  • Shredded cheddar cheese
  • Italian seasoned bread crumbs

COOK’S NOTES FOR CHEESY SHEPHERD’S PIE:

  • Though presented here in individual crocks, you can make this recipe in a 13X9 casserole dish.
  • We happen to have fresh leftover corn in the fridge, so I used that for the veg component, but feel free to use frozen corn that’s been thawed, or canned corn.
  • Shepherd’s pie, originally called cottage pie, can also be made with ground lamb. We’ve always made it with ground beef – but feel free to substitute.
  • I make my mashed potatoes with whole milk and butter, but sour cream makes a fine substitute for the milk.
  • After baking the pie, add the cheddar and buttery bread crumbs and throw it under the broiler for a few seconds. This will melt the cheese and toast up the crumbs.

Though this dish can stand alone, sometimes it’s nice to serve with a side salad.

Description

‘Tis the season! Cheesy Shepherd’s Pie, with its shredded cheddar and buttery bread crumbs, tops my list for cozy comfort food!


Ingredients

Scale

2½ pounds Yukon Gold potatoes

½ cup of milk

4 Tbsp of butter

Salt and pepper, to taste

2 lbs. ground sirloin

2 cans of corn, drained (Or fresh off the cob, or frozen that’s been thawed.)

1 1/2 cups shredded cheddar cheese

1/4 cup unsalted butter, melted

1 cup Italian seasoned bread crumbs


Instructions

Boil your peeled and quartered potatoes until fork tender. Drain.

Place potatoes in mixing bowl with milk, 4 Tbsp butter, salt and pepper.

Beat on high speed until smooth and creamy. Set aside.

In a non-stick skillet, cook the ground sirloin until it is fully done (no pink left).

Ready the corn.

Layer ingredients in individual crocks, or a 13 x 9 pan, beginning with the beef.

Top the beef with corn.

Top the corn with mashed potatoes.

Place in a 350 degree oven and heat through for 35 – 40 minutes.

In the meantime, prepare the buttery bread crumbs: In a small pan, melt 1/4 cup butter and add the breadcrumbs. Using a fork, stir to combine.

Remove shepherd’s pie from the oven.

Sprinkle cheese and bread crumb mixture on top.

Pop under the broiler for a few seconds until cheese is melted and crumbs are toasted.
