Caramelized Butternut Squash

Ingredients

  • 2 large butternut squash (around 4 1/2 lbs. total), peeled and cut into 1-inch cubes
  • 6 Tbsp. unsalted butter, melted
  • 1/3 cup light brown sugar
  • 2 tsp. kosher salt
  • 1 tsp. freshly ground black pepper

Instructions

  1. Preheat the oven to 400 F.
  2. Place the squash in a large mixing bowl.
  3. Add the melted butter, brown sugar, salt and pepper and toss so they’re completely combined.
  4. Spread the squash in a single layer on a large baking sheet.
  5. Roast for 50 – 55 minutes, until the squash is tender and the sugar begins to caramelize.
  6. While roasting, gently turn the squash a couple times for even browning.
  7. Serve hot and season, to taste.
