Banana Cake with Cinnamon Cream Cheese Frosting is my favorite thing to use extra-ripe bananas for!


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 4 Tbsp. unsalted butter, room temperature
  • 2 Tbsp. canola oil
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 large egg white, room temperature
  • 1 tsp. vanilla extract
  • 4 large ripe bananas
  • 1/4 cup milk
  • 8 oz. cream cheese, room temperature
  • 4 Tbsp. unsalted butter
  • 1/2 Tbsp. vanilla
  • 2 cups confectioners’ sugar
  • 1/4 tsp. cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Spray 8×8 pan with cooking spray.
  3. Whisk together flour, baking powder and salt. Set aside.
  4. Using an electric mixer, beat butter, oil and sugar.
  5. Beat in eggs and egg white, one at a time, mixing well after each addition.
  6. Mix in vanilla.
  7. In a separate bowl, mash bananas with milk. Set aside.
  8. Gradually mix in half the dry ingredients into butter mixture.
  9. Mix in bananas.
  10. Mix in remaining dry ingredients.
  11. Pour cake batter into prepared baking pan.
  12. Bake for 35-40 minutes, or until toothpick inserted comes out clean.
  13. Cool cake in pan on wire rack.
  14. Using an electric mixer on medium speed, beat cream cheese, butter and vanilla.
  15. Reduce speed and gradually add confectioners’ sugar and cinnamon.
  16. Spread frosting on cake.
  17. Sprinkle with walnuts.
