Gluten-Free Blueberry Pancakes

Ingredients
  • 2 cups gluten-free baking mix
  • 1½ cups skim milk
  • 2 eggs
  • 1 stick melted unsalted butter
  • ¼ tsp. cinnamon
  • ½ tsp. vanilla
  • 1 Tbsp. Agave
  • ⅔ cup fresh blueberries
  • More fresh berries to top finished pancakes
  • Lemon zest
Instructions
  1. Combine all ingredients except blueberries.
  2. Stir until thoroughly combined.
  3. Gently fold in blueberries.
  4. Grease griddle with coconut oil.
  5. Heat griddle to medium.
  6. Pour ⅓ cup of batter per pancake onto griddle.
  7. Cook each side for 5 - 7 minutes, until golden.
  8. Remove from heat.
  9. Top with fresh berries, maple syrup, and lemon zest.
