Who’s ready for picnic season?
I swear I can hear the woosh and feel the wind of your hands flying high toward the sky in perfect unison!
It’s that time, my friends! Spring is finally here which means it’s time to load up our favorite wicker baskets, grab our soft but durable blankets, head outside and enjoy the sunshine. And I have just the thing that will transform our meal into a special outdoor occasion… Castle Wood Reserve® Angus Seasoned Roast Beef.
Whether smoked, rubbed, or richly seasoned, the attention Castle Wood Reserve® pays to flavor and juiciness makes buying their products a simple choice for our family. Everything from roast beef to turkey, chicken to ham, and a variety of cheeses are sold at Walmart, making it easy to stock up, especially now that picnic season is upon us.
This open-faced sandwich brings all the punchy flavor of tender seasoned roast beef and fiery horseradish while keeping the bread-to-topping ratio in complete balance. Who doesn’t love that?
As we all know, pack-and-go picnics are best when they are prepared using high-quality ingredients that can be served at room temperature. This surely makes for a picnic experience that everyone can enjoy.
Sandwiches made with crisp spears of asparagus and a drizzle of horseradish cream neatly rolled in Castle Wood Reserve® Angus Seasoned Roast Beef set atop a sturdy slice of kimmelweck focaccia will have our friends and family lining up for more. The kimmelweck foccacia is a nod to my college days in Western New York. It was there that I first fell in love with a sandwich called ‘Beef on Weck’; it’s comprised of thinly sliced juicy roast beef piled high on a Kaiser roll that’s been dressed up in caraway seeds and salt. Man, what that combination of flavors does to the tastebuds, which is why kimmelweck foccacia makes a perfect vessel for our Angus Seasoned Roast Beef and horseradish!
We can’t forget the accoutrement…bite-size snacks and sides as colorful, tasty, and portable as our imaginations will allow. Foods like cherry tomatoes, fresh berries, assorted nuts, briny olives, mini pickles, hard cheeses and zesty salads go a long way in the nibbles department.
For picnics to go off without a hitch there are a few things we’ll want to have on hand:
- Castle Wood Reserve® Angus Seasoned Roast Beef, Turkey, Ham, Chicken & Cheeses
- Hearty breads like focaccia or baguettes
- Foods that are easy to manage (i.e. – nothing too delicate or sauce-y)
- Fare that can be prepared ahead and keeps well at room temperature
- Environmentally friendly lightweight bowls, dishes and flatware
- Parchment paper and twine

Description
Roast Beef & Asparagus on Kimmelweck Focaccia with Horseradish Cream is the meal picnic dreams are made of!
Ingredients
- One 1 lb. package store bought pizza dough
- 1/4 cup olive oil, divided
- 2 Tbsp. caraway seeds
- 1/2 Tbsp. kosher salt
- 36 thin stalks of asparagus
- 12 slices Castle Wood Reserve ® Angus Seasoned Roast Beef
- 8 oz. sour cream
- 1 1/2 Tbsp. fresh horseradish
- Black pepper, to taste
Instructions
- Preheat oven to 375 F.
- Prepare baking sheet by covering with 2 Tbsp. olive oil.
- Stretch dough in a rectangular shape onto baking sheet.
- Top dough with remaining olive oil, caraway seeds and kosher salt.
- Bake for 15 – 20 minutes or until browned.
- In the meantime, trim the asparagus with a paring knife to remove the tough, fibrous ends.
- Blanch asparagus in a salted pot of boiling water for 1 minute until tender.
- Remove with tongs and immediately transfer to ice water for 1 minute to stop the cooking process.
- Once cooled, remove from water and pat dry.
- Prepare horseradish cream by mixing sour cream with horseradish and cracked black pepper, to taste.
- On a piece of roast beef smear 2 – 3 tsp. horseradish cream, set down 3 stalks of asparagus and roll up.
- Place roast beef rolls on a slice of focaccia.
- Enjoy!
